The dry carbonation source is prepared by co grinding calcium carbonate with anhydrous, nontoxic acid .(such as citric, malic, fumaric, tartaric and adipic acids )
The acid in the dry carbonation source will be present in amount of 1-20% (preferably 1-10% ) in excess of the amount theoretically required to release all of the carbon dioxide from the calcium carbonate and a supplement carbonation source if one is employed.
The co grinding preferably grinds the aggregates of calcium carbonate into finely divided particles ranging from less than about 100millimicrons up to about 10 microns, causes intimate association (increased surface area) with the acid and grinds the acid to an average particle size of less than about 100microns. The dry carbonation source can be blended with a flavorant and a sweetener to formulate a dry carbonated beverage concentrate.
Of the natural sweeteners , sucrose is preferred.
CHEMICAL REACTIONS
The carbonation is employed in amount sufficient to obtain a calcium ion concentration in the final beverage of from about 0.15 – 0.26%, in combination with a supplemental carbonation source such as
● sodium carbonate, sodium bicarbonate, potassium carbonate, potassium bicarbonate, ammonium carbonate, ammonium bicarbonate or combination thereof, which is employed in amount sufficient to bring the carbonation to the desired level of greater than about 1.0 and preferably greater than about 1.3, volumes of carbon dioxide per volume of final beverage. A typical dry carbonated beverage can have the following formulation on a dry basis:
Calcium carbonate 3.15%
Malic acid 6.25%
Sodium bicarbonate 1.82%
Sucrose 88.60%
Orange flavorant 0.15%
Lemon flavorant 0.03%

TYPES OF COLD CHAINS
-SHOCK FREEZERS
Shock Freezers are professional equipment that controls temperature necessary for keeping products fresh for a long time.
While preserving the products the equipment makes to keep undamaged nutritional value of the products after being defrosted. The equipment is made to consists of Double Stage Semi Hermatic compressors. The Shock freezers system allows to lower the temperature very rapidly up to -180°C degrees. Freezing is provided by air coolers of it by blowing over fronted surface of the wagon. This enables to freeze down quickly in cold air flow. The room air should not exceed 35°/-40.°C. Besides, it’s proven to be a low-waste and environment friendly system.
COLDSTORAGE
This system is manufactured and installed with the entire components like it is ready to use. It could be of mobile device.
This system can be disassembled so it can be moved to other places.
Cold storage consist of the following levels and types of preserving:
-Cold-rooms 🙁 +16° / +5°C)
-Cold storage Rooms (+5°/-5°C)
-Freezing Rooms : (-18°/-23°C)
-Shock freezer :(-35°/-40°C) .
DEEPFREEZE ROOMS.
These are for preserving products such as meat, poultry etc. For a long time. They are preserved under temperatures not exceeding – 18°/-23°C. In order to isolate these rooms 150mm width sandwich panels are used.
COLD ROOMS
Cold rooms are used to keep baked goods, chocolates etc.
The cold rooms prevent bacteria from growing. Low ventilation allows workers to work without endangering their health which is very important aspect too.
